A frozen turkey needs about 24 hours in the refrigerator for every 4 to 5 pounds, or about 30 minutes per pound in cold water. A 16 lb turkey is therefore 3.2 to 4 days in the fridge, or 8 hours in cold water. These are the USDA Food Safety and Inspection Service times, and they are the same for any brand.
Refrigerator thawing times by turkey weight
The refrigerator must be at 40 °F or below. Leave the turkey in its original wrapping and set it on a tray to catch drips. The table uses the USDA rule of 24 hours per 4 to 5 pounds: the fast end divides the weight by 5, the slow end by 4.
| Turkey weight | Fridge, fast end | Fridge, slow end | Cold water |
|---|---|---|---|
| 10 lb | 2 days | 2.5 days | 5 hours |
| 12 lb | 2.4 days | 3 days | 6 hours |
| 14 lb | 2.8 days | 3.5 days | 7 hours |
| 16 lb | 3.2 days | 4 days | 8 hours |
| 18 lb | 3.6 days | 4.5 days | 9 hours |
| 20 lb | 4 days | 5 days | 10 hours |
| 22 lb | 4.4 days | 5.5 days | 11 hours |
| 24 lb | 4.8 days | 6 days | 12 hours |
Plan on the slow end. Thawing may finish a day early, but a turkey that is still icy on Thursday morning is a much bigger problem. Once thawed in the fridge, the turkey keeps 1 to 2 days before cooking, so an early finish costs nothing.
When to start for Thanksgiving 2026
Thanksgiving is Thursday 26 November 2026. The turkey should be fully thawed by Wednesday, so count back the slow end of the range, rounded up to whole days:
| Turkey weight | Days in fridge | Move it to the fridge no later than |
|---|---|---|
| 12 lb | 3 | Monday 23 November |
| 16 lb | 4 | Sunday 22 November |
| 20 lb | 5 | Saturday 21 November |
| 24 lb | 6 | Friday 20 November |
Buying a fresh turkey avoids all of this, but fresh birds should be bought only 1 to 2 days before cooking.
Cold-water thawing step by step
- Keep the turkey in its leak-proof wrapping. If the bag is torn, put it in a second bag so the water cannot get in and the turkey cannot absorb it.
- Submerge it fully in cold tap water in a clean sink or large container.
- Change the water every 30 minutes so the surface stays cold.
- Allow about 30 minutes per pound: 12 lb is 6 hours, 20 lb is 10 hours.
- Cook the turkey immediately after thawing. Unlike a fridge-thawed bird, a cold-water-thawed turkey must not wait.
Never thaw on the counter or in hot water. If you skip thawing altogether, USDA says a frozen turkey is safe to roast, but it takes at least 50% longer than a thawed one.
Salting a thawed turkey
If you plan to brine, the bird must be completely thawed first, and a dry brine adds 1 to 3 days. The turkey brine calculator gives the salt in grams and builds the whole schedule, thawing included, back from your dinner date.
Frequently confused: how long to thaw versus how long to cook
Thawing and roasting are separate clocks. After thawing, a 14 to 18 lb unstuffed turkey roasts in 3.75 to 4.25 hours at 325 °F (USDA), and it is done when a thermometer reads 165 °F in the innermost part of the thigh and wing and the thickest part of the breast. The turkey cooking time calculator covers every size.
